I was just searching around to see which fruits produce higher concentrations of ethylene but to no avail.

This page has some general information on ethylene and mentions apples, avocados, bananas, melons, peaches, pears, and tomatoes.

I'd also be interested to know the PPM of co2 produced by ripening fruit.
