Back in my restaurant days, we had a chart showing the strength of ethylene producers so we could stock the cooler in a way that would minimize the rate of ripening. From the top of my head, tomatoes and bananas were the heaviest emitters, so they went on the top shelf. And bananas are certainly cheaper, at least at my grocery store.
