I suppose your correct but I have had money orders replaced before when I received a mangled utility bill that must have fallen off the truck back in the mail because the return address was still visible.
I would think a money order would be somewhat slightly more efficient than cash because your filling in the payee like SeedsDirect or whatever the name of the seedbank is. An employee would be more tempted to steal cash, than something that would need to be washed and or forged to derive benefit. Im sure the note could be washed of your entrys but less a pain in the ass to take from the cash clients.
You make a good point that if they were going to burn you sending a money order is as you put it fundamentally know different than cash.
