What you are doing is right in line.
The only thing you can do now is WAIT. When those new shoots start growing upwards, you can tie them down too.
I see that you have drilled holes in your pot to tie strings to and that is EXACTLY what I do. I just keep pulling down the tall shoots... I have one plant that the main stem comes out of the soil and actually goes in a circle about 1" above the soil. I trained it out from the center and as it grew, kept it tied down. It's launched countless shoots and it's looking all bushy and reckless. I know when I finally get her in flowering, she will go absolutely crazy. LST rules.
Don't be afraid to bend her, she can take more than you think.
