This might sound bad but...

Couldn't I just cut the plant down (by the soil)

and hang it upside down in a low humidity but warm area for 2 weeks?

also...

Is it alright to just pinch a little bud every once in a while and smoke it? will it kill the plant after a while?

and...

if I where to just cut off the buds would they grow back and would the plant stay healthy?

Don't know about the 2 weeks, depends on the plant/grow, but yeah that's the idea. Some debate about leaving fan leaves on or taking them off, but basically low humidity/light and cool/warm temps are fine.
I take test buds starting around the 6th week of flowering, you don't want to deforest the darn thing, if your plant is looking like locusts are munching on it, you might be QCing a bit too much.
As long as you don't get carried away the plant won't suffer, imo.
