Hydrosan had a thread that explained the pH swing in de-mineralized water
seems the calcium acts as a buffer

I always throw some tap in when I'm going to pH plain [no nutes] water

also.....water that's traveled through pipes seems to contain more gasses than water that has sat for a while
this isn't just chlorine.....[which everyone has heard of]
but also gasses like co2 [which lowers the pH]

so water that has co2 in it tends to rise [pH] as it sits
and the same thing happens with high levels of calcium

it either bonds with the hydrogen or releases it...don't know why
just the 'apparent' effects

I haul 1 gallon jugs to one of 200 coin-op water machines in this town.

Sorry I did not post in a timely manner.

My meter is a PPM not an EC meter.

I believe I got that information from Old Phart, and yes it was a few years ago.
