![]() | I read this somewere on the web and i have had good success with it. I have always used very dry leaves and very little stem. First Take a pound of butter (four sticks) Take your leaves and crush them in your hands dont make them to small I found that if you make it into a flour it is harder to get it all out and it tastes like crap. put all of this into a croc pot with a couple of cups of water. The water helps to grab any left over chlophil and it tastes much better. Put the croc pot on high until it starts to boil. now turn it down to low and let it simmer for about two hours. turn the crocpot off and let it cool for a while just long enough so it wont burn you. now you need to filter it throug a piece of cheese cloth or even the toe of a pair of nylons. i put the nylon over a 1 gal pitcher and pour the whole thing in. take the nylon out with all the leaves and crap in there and and squeeze the rest of the butter out sence it likes to stick to the plant matter. once you have all the butter out toss the leaf matter and put the whole liquid into the freezer for a few hours. the butter will rise to the top and the water will freeze into an ice block on the bottom. take the block out of the container and cut off the ice and bam you have butter only. i think you will notice that the butter is not as dark if you use the water in the butter while cooking. i melt my butter down one more time and put it in a old margarin container and freeze it untill it will be used. good luck | ||
