They sell these at the barter fair in e washington, they are the sh*t! So I figured out how the lady makes em Totally covers the cannabutter taste and they are an excellent treat!Pumpkin Roll 3 eggs 1 c. sugar 2/3 c. pumpkin 1 tbsp. lemon juice 3/4 c. flour 1 tsp. baking powder 1 tsp. ginger 2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. salt 1 c. chopped walnuts (optional) Beat eggs on high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Stir together dry ingredients and fold into pumpkin mixture. Spread in greased and floured 15x10 inch jelly roll pan. Top with chopped nuts, if desired. Bake at 375 degrees for 15 minutes. Turn out on a towel sprinkled with powdered sugar. Starting at narrow end, roll cake and towel together. Chill. Then unroll cake and spread with filling mixture. Reroll cake. Chill. Pumpkin Roll Filling 1 1/2 c. powdered sugar 12 oz. cream cheese 8 tbsp. cannabutter 1 tsp. vanilla These are a fantastic snack, albeit not without some effort The reason these taste great is because the cannabutter is in the frosting inside the cake, instead of the dough itself, providing a sweet taste because it is camoflauged by the super sweet frosting. btw- If you aren't a great cook, when it says to roll the cake that means to roll it up similar to a cinammon roll, don't just ball it. You can also pre-cut it before you stick it in the oven the last time, and just lay the rolls out flat instead.
