the size of the bin and worm population depends most on the amount of worm-food you want to compost
they can consume up to half their weight in green manure everyday and will multiply ...and as long as food waste stays buried there should be no smell
and if they are provided a happy home, they aren't likely to attempt escape keep the bin open in direct light for the first day or so after putting them in and they'll be most likely to burrow down deep
