Can a large buildup of salt on rockwool cause nutrient deficiencies due to a saturation of salt on/around and possibly inside the cube? Like a K deficiency?

Salt build-up can definitely cause problems, but you'd have to have your plants in those cubes for a while before that happened...which begs the question, how big are your plants and why are they still in cubes? How much have you been feeding them?
