at what point during scrog would i top and for what reason is this done?

I also grow ScroG...Mine are topped at about six inches, then topped again at 10 inches. Topping affects the "bushy-ness" of a plant. If I were to leave my plants untopped, I would only get 1 or 2 main cola's off of each plant. After topping(both times) there is usually 4 or more main cola's. I flower my girls at 12 inches. Topping is almost a requirement (depending on the strain) within a ScroG grow. Topping does increase the grow time by a touch...we are hurting them to train them, they need time to recover.
