I couldn't tell you on a pH scale because I never test my pH level but not acidic enough that I would worry about it too much. My seedlings were fine. I supposed my reply isn't really fair because I did not use them properly.
I am one of these people that opens the package and does whatever and then reads the label when anything goes wrong.

It is my own opinion that you either pop the seed in soil/pellet straight from the packet or nurse a good tap root on it.
I think transplanting a seed just after the shuck has cracked is a critical moment for the seed and should stay in place. I know some people do it with success but personally I like to see an inch of tap root before up planting.
Next time try putting them between two pieces of black cloth and in an airtight container. I put this in the boiler room and after 3-5 days get what's in the picture below.
Just make sure the pellets are the same temperature as the seedlings so there's no root shock

I'd not stated that I use Coir pellets, not peat

Peat pellets you want to water the day before you put your seed in so it drains out a bit. They hold an abundance of water and usually you only have to do the initial water until the seed sprouts and the whole thing is dried out.

Frankly I have better luck putting the seed in water till it drops and then straight into soil point down. Although peat pellets with clones might be pretty good.

I've used peat pellets since day one with no problems.

Here's my process:

I use agent 86's germination process, once the seed(s) cracks I soak a peat pellet in warm-hot water because it expands faster and warmth is good for germination, I squeeze the excess water out of the pellet and make sure it retains its basic shape, I use chopsticks to pick up and plant said seed tap root down just barely under the surface but completely surrounded in sweet peat goodness, put in anything that resembles a green house (lots of times I've used a bowl covered in plastic wrap) under lights. I get seedlings 4-6 days from initial germing every time.
